How can I plot in a self-defined function instead a cut line within a 3D model?
You can use a 3D parameterized curve data set.

I would like to plot on a point cloud that has no defined function and I'm not getting. It's possible?

Not in 4.2, but support for this was added in 5.1: You can create a cut point data that points to a file containing the coordinates and use it in a Point Trajectories plot with a Color Expression attribute.
