Can I obtain the potential minimum of a solution to Poisson's equation?

If I have solved Poisson's equation for a function, u, can I get the potential minimums of this point in COMSOL? Better yet, can I get all the critical points of the function?

Have you considered using probes? See snapshot attached. You can find maxima, minima, and averages over boundaries, surfaces, volumes, etc.
