simpel model of an extruder

We are struggling with a simpel representation of an extruder. We first want to simulate a rotating rod in an concentric cilinder. The fluid around the rod is water (laminar flow). Later on, we will try to define a single srew extruder. Which physics do we have to use? We tried single-phase flow rotating machinery, but than all the solid phases like the rod and cilinder are dealed as fluids.
