My question is:
How to simulate mixing of two fluids with different density ?
I have a geometry with two channels confluents into a third channel. Waters with different density are entering in each channel. How I can set up the different density at a boundary condition at the inlets ?

You may need to consider the two-phase flow, and you can find some examples like that in the model library.
