Plot shows different results than data export

I have a scalar value x that I 3D plot which works fine. The values across the volume are all somewhere between 0 and 137 which is very realistic (see figure forumq1), except for one element which is -41.8 (see figure forumq2). This is a numerical fluke I am willing to accept.

In a second plot I plot a function alpha(x)=1-exp(-x) which should be between 0 and 1 for positive x. The negative outlier is 1-exp(41.8), so very negative.

However, in this plot all elements are coloured as if they have a seemingly random negative value (see forumq3). I know these are not the real values because if I export the data to excel they are all nicely between 0 and 1 except for that single element. This is very annoying because it messes up the presentable figures.

What can be the cause of this?
